The Bon Ton Restaurant, which was originally located next door to the St. Elmo Hotel, was run by Mrs. Kittie Heit who purchased it around 1890.

The Bon Ton Restaurant, now located in the basement level of the hotel, continues to maintain it's excellent reputation for great food and wine and is one of the finest restaurants on the Western slope with an award winning wine list.
